Sofia with Sungold Tomatoes, Bacon, & Manadori Balsalmico
This comes Sarah Stegner at Prairie Grass, a divine cook. who works like a demon at the Chicago Green City Market in the summer. When ingredients are the best they speak for themselves and she always captures the essence and integrity of her ingredients in perfect combinations. She made me fall in love with Manadori balsamico years ago. Now I order it from my friend Sofia Solomon (for whom we named this cheese) at Tekla, Inc. in Chicago. Serves 4.
4 slices good baguette (brushed with butter and toasted in skillet until golden brown)
4 slices Capriole Sofia
8 each Sungold tomatoes, quartered
1 piece baby fennel, thinly sliced
2 radishes, thinly sliced
1 Tbsp. chopped fresh herbs
1 tsp. olive oil
salt and freshly ground black pepper
4 slices bacon, rendered crisp and finely julienned (keep warm)
Manodori Balsamico
Place a slice of Sofia on a sauteed slice of french bread. Toss the tomatoes, baby fennel, radishes and herbs with olive oil, salt and pepper. Add the warm bacon at the last minute. Drizzle with balsamico. Serve as a salad with crouton on top, or as a crostade with veg on top.
